This is one of the top rated recipes on the Whole Foods web­site and with good rea­son. We cant get enough of this one. We have had it about 4 times over the last 10 days. Even I made it so it cant be hard. I also tripled the recipe. My daugh­ter used high qual­ity kitchen scis­sors to cut the lit­tle toma­toes. She thought it was great that they squirted every­where but me, not so much. I would just rec­om­mend cut­ting low in the bowl to min­i­mize this if pos­si­ble. The scis­sors really did work great despite the splat.

This delec­table salad proves that fresh, high qual­ity ingre­di­ents taste superb with lit­tle adorn­ment. Halved grape toma­toes and avo­ca­dos join onions, pars­ley, cilantro, lemon juice, extra vir­gin olive oil and sea salt in this per­fect side dish or sim­ple appe­tizer with tor­tilla chips. Can be pre­pared up to four hours ahead of serving.

Ingre­di­ents
1 pint grape toma­toes, halved
1/2 cup chopped flat-leaf pars­ley or cilantro, or mix­ture of both
1 table­spoon extra vir­gin olive oil
1 table­spoon lemon juice
1/4 white onion, chopped
2 avo­ca­dos, chopped

Fresh Home Cooked Bacon Bits (Optional for added flavor)

Sea Salt to taste (optional in place of bacon) -

Method
In a non-reactive glass bowl toss together toma­toes, pars­ley, oil, lemon juice, and onions. Add avo­ca­dos and salt (or bacon on top) and toss gen­tly. Chill if not serv­ing immediately.
