I have been on a warm apple kick lately and tonight we all felt like something sweet so…
The kids helped to make this which made it taste all that much better. They did look at me funny when I added the rum but once I explained that the alcohol wouldn’t be there when they ate it they were okay. Not something I would do a lot of since the rum is grain based but it was fun setting it on fire and the kids thought that was cool too! You have to turn the lights off to get the full effect because it burns a light blue color that is very faint.
3 medium organic apples
1 Scoop Decadent Delight Vanilla Bean Ice Cream (coconut milk based)
1 Tablespoon Coconut Oil
1 Tablespoon Raw Organic Honey
Half a lemon (for juice)
Rum
Fresh Cinnamon Sticks (or the kind you buy in the spice section)
Sliced Raw Almonds
Heat coconut oil over medium heat and then add apples cut in to small chunks after the oil is warm. Coconut oil doesn’t take long to warm up. Add the honey. Sprinkle the cinnamon over top and turn the apples. Do this again to get a good coating on the apples. Saute for 15 minutes flipping or turning the apples often to evenly brown. Squirt the lemon juice onto the apples just before you are done cooking (about 2 minutes) stir or flip some more to coat evenly.
If you are using a metal pan turn off heat and bring to the table. Place on a hot pad. If you are not using a metal pan (NO TEFLON) move the apples to a dish a ceramic dish.
Pour small amount of rum into the pan or bowl, turn out the lights, and ignite with a match or lighter. You may have to tip the dish around a bit and re-light a few times as it wants to go out sometimes before the alcohol is burned off.
Once you cant keep it burning anymore add the warm apples on top of a scoop of the vanilla ice cream. Sprinkle with a pinch of raw almond slices.
