Here is a 4.5 star recipe that I found and made recently for my wife’s birthday dinner. I must admit that I impressed myself with this meal because I am a fraction of the cook my wife is. The only thing working in my favor was the fact that I am pretty handy on the grill. If you like shrimp, and you have a grill, you will love this. I promise.
Prep Time: 15 min
Cook Time: 6 min.
Ingredients
- 1 large clove garlic
- 1 teaspoon coarse salt — optional (careful with your calcium here)
- 1/2 teaspoon cayenne pepper
- 1 teaspoon paprika
- 2 tablespoons olive oil
- 2 teaspoons lemon juice
- 2 pounds large shrimp, peeled and deveined
- 8 wedges lemon, for garnish
Directions
- Preheat grill for medium heat.
- In a small bowl, crush the garlic with the salt. Mix in cayenne pepper and paprika, and then stir in olive oil and lemon juice to form a paste. In a large bowl, toss shrimp with garlic paste until evenly coated.
- Lightly oil grill grate (optional — this never works well for me). I like using skewers for shrimp and it makes turning them a snap. Cook shrimp for 2 to 3 minutes per side, or until opaque. Transfer to a serving dish, garnish with lemon wedges, and soak em’ in lemon juice, serve.

I served this with sauteed zucchini and a salad of mixed greens. Booyah!
