Here is a 4.5 star recipe that I found and made recently for my wife’s birth­day din­ner. I must admit that I impressed myself with this meal because I am a frac­tion of the cook my wife is. The only thing work­ing in my favor was the fact that I am pretty handy on the grill. If you like shrimp, and you have a grill, you will love this. I promise.

Prep Time: 15 min

Cook Time: 6 min.

Ingre­di­ents

  • 1 large clove garlic
  • 1 tea­spoon coarse salt  — optional (care­ful with your cal­cium here)
  • 1/2 tea­spoon cayenne pepper
  • 1 tea­spoon paprika
  • 2 table­spoons olive oil
  • 2 tea­spoons lemon juice
  • 2 pounds large shrimp, peeled and deveined
  • 8 wedges lemon, for garnish

Direc­tions

  1. Pre­heat grill for medium heat.
  2. In a small bowl, crush the gar­lic with the salt. Mix in cayenne pep­per and paprika, and then stir in olive oil and lemon juice to form a paste. In a large bowl, toss shrimp with gar­lic paste until evenly coated.
  3. Lightly oil grill grate (optional — this never works well for me). I like using skew­ers for shrimp and it makes turn­ing them a snap. Cook shrimp for 2 to 3 min­utes per side, or until opaque. Trans­fer to a serv­ing dish, gar­nish with lemon wedges, and soak em’ in lemon juice, serve.

I served this with sauteed zuc­chini and a salad of mixed greens. Booyah!
